Anyone have a list of maximum safe pressure for different kinds of fittings?  I used to have a general one that listed the different types of metals and maximum pressure.  Cannot find it anywhere.
We have a customer that put a brass fitting on the end of a 5000psi gauge.
  Anyone have any ideas?

For the most part I use the specs out of my MSC Industrial Suppy catalog. I don't know if it will help in your application, I use it to keep our lab techs from killing themselves.

I know I wouldn't be happy with brass at 5,000psi.

Try ANSI B.31

Grab a copy of the Swagelok catalog, they have some nice pressure tables and can be used as a general reference.

An example from their catalog lists pressure ratings (PSIG) for their NPT fittings and adapters as follows:

NPT   Male     Female       Male   Female
            316SS                     Brass
1/8   10,000     6,500       5,000    3,200
1/4   8,000      6,600       4,000    3,300
